Beer muffins recipe

"Beer muffins?!" you ask?
"Absolutely!" I reply.

These tasty muffins pair wonderfully with a bowl of hot soup or steaming chili during the cool months of winter. If you are looking for a lighter flavor, use a lager. If you prefer a stronger flavor, try these with a stout.

BEER MUFFINS
  • 3 cups buttermilk baking mix
  • 2 tablespoons white sugar
  • 1 cup beer
Directions
Preheat oven to 350 degrees F. Line muffin tin with paper liners or spray with non-stick spray.  In a large bowl, combine baking mix, sugar and beer; stir until smooth. Pour batter into prepared muffin cups. Bake approximately 15 minutes, until muffins are golden brown.

Cook's Notes-for best flavor, don't use a light beer. Experiment with different types of beer to find what flavor appeals most to you.
