Peppermint eggnog martini from Atkins helps you ring in a delicious, low carb New Year

Searching for a new way to ring in the New Year?Try this fabulous take on traditional eggnog. This recipe may be low carb, but it is filled with holiday flavor!

INGREDIENTS 
  • 2 ozs Sugar Free Chocolate Chips 
  • 2 tbsps Heavy Cream 
  • 9 pieces Sugar Free Starlite Mints 
  • 2 fl ozs Vodka 
  • 6 servings Old Fashioned Eggnog 


DIRECTIONS 
Use the Atkins recipe to make Old Fashioned Eggnog for this recipe. You will need one recipe or 6 servings. When making the eggnog, add 1/8-14 tsp (to taste) peppermint extract. Crush the mints and put onto a shallow plate. Set aside. Melt chocolate and heavy cream in a microwave safe bowl at 30 second intervals, stirring between intervals until the chocolate has melted and is smooth. Allow to cool slightly then dip each (6) martini glass rim in the chocolate and then the crushed starlight mints. Add 2 oz vodka to the eggnog and stir to combine. Fill decorated martini glasses with about 1/2 cup eggnog and enjoy.
