Ginger Lemon Champagne Sparkler recipe from Atkins

Champagne and New Year's Eve celebrations go hand in hand. Try this recipe from Atkins to celebrate a New year and a new you of carb cutting is a part of your resolutions.

GINGER LEMON CHAMPAGNE SPARKLER
INGREDIENTS 

  • 1 tbsp Lemon Peel 
  • 1 tbsp Ginger 
  • 2 tbsps Xylitol 
  • 2 tbsps Erythritol Powder 
  • 1/3 cup (8 fl oz) Water 
  • 1 pinch Stevia 
  • 1 bottle Champagne 
  • 6 fl ozs Vodka 
  • 3 lemon yields Lemon Juice 

DIRECTIONS 
Remove the peel from 1 lemon then squeeze the juice from all 3 lemons and set aside. Place the lemon peel, grated fresh ginger, xylitol, erythritol, stevia and water in a small sauce pan. Bring to a boil (be sure all sweeteners have dissolved) then remove from the heat and allow to cool for 1 hour. Strain off the lemon and ginger; keep both the syrup (reserved in a small container) and the lemon peels. Take the peels and roll them in additional erythritol and place them on a silicone mat or parchment paper until ready to use. These may also be kept in an airtight container in the refrigerator for up to 1 week. Combine the vodka, lemon juice and reserved syrup (about 1 cup). Add 2 Tbsp of the vodka mixture to a champagne glass, top with champagne and garnish with a candied lemon peel.

Peppermint eggnog martini from Atkins helps you ring in a delicious, low carb New Year

Searching for a new way to ring in the New Year?Try this fabulous take on traditional eggnog. This recipe may be low carb, but it is filled with holiday flavor!

INGREDIENTS 
  • 2 ozs Sugar Free Chocolate Chips 
  • 2 tbsps Heavy Cream 
  • 9 pieces Sugar Free Starlite Mints 
  • 2 fl ozs Vodka 
  • 6 servings Old Fashioned Eggnog 


DIRECTIONS 
Use the Atkins recipe to make Old Fashioned Eggnog for this recipe. You will need one recipe or 6 servings. When making the eggnog, add 1/8-14 tsp (to taste) peppermint extract. Crush the mints and put onto a shallow plate. Set aside. Melt chocolate and heavy cream in a microwave safe bowl at 30 second intervals, stirring between intervals until the chocolate has melted and is smooth. Allow to cool slightly then dip each (6) martini glass rim in the chocolate and then the crushed starlight mints. Add 2 oz vodka to the eggnog and stir to combine. Fill decorated martini glasses with about 1/2 cup eggnog and enjoy.

Celebrate the holidays with infusions from Prairie Organic Spirits

The holiday season is upon us. If you are looking for unique and delicious cocktails to serve during this festive season, Prairie Organic Spirits has developed some amazing infusion recipes that will take your cocktail hour to a whole new level!


DIY Holiday Infusions Prairie Organic Spirits
Espresso Cinnamon Infusion 

  • 1 bottle Prairie Organic Vodka 
  • 3 tablespoons of whole espresso beans 
  • 3 sticks of cinnamon 

Displace 1/3 vodka of the bottle of Prairie Organic Vodka into another vessel to make room. Fill with ingredients, top off with reserved vodka and secure cap tightly. Store in refrigerator or a dark cool space for 3–4 days for optimal flavor.
Perfect for a Nutty Russian: Combine 1 oz infused Prairie Organic Vodka with 1 oz hazelnut liqeuer and 1 oz coffee liqueur over ice in a rocks glass. Garnish with a cinnamon stick.

Vanilla-Cardamom Infusion 

  • 1 bottle Prairie Organic Vodka 
  • 1 vanilla bean, split lengthwise 
  • 5 cardamom pods, lightly crushed 
  • 2 cinnamon sticks 

Displace 1/3 vodka of the bottle of Prairie Organic Vodka into another vessel to make room. Fill with ingredients, top off with reserved vodka and secure cap tightly. Store in refrigerator or a dark cool space for 2-3 days for optimal flavor.
Try with a Thai Gimlet: Add ¾ oz simple syrup and 4 basil leaves to shaker and muddle thoroughly. Add 1.5 oz infused Prairie Organic Vodka and ¾ oz lime juice. Shake with ice and strain into a cocktail glass.

Star Anise & Cucumber Infusion 

  • 1 bottle Prairie Organic Gin 
  • 3 star anise 
  • Sliced cucumber 

Displace 1/3 gin of the bottle of Prairie Organic Gin to another vessel to make room. Fill with star anise and handful of sliced cucumber, top off with reserved gin and secure cap tightly. Store in refrigerator or a dark cool space for 5-7 days for optimal flavor.
Try an enhanced version of the classic Gin & Tonic: Combine 1.5 oz infused Prairie Organic Gin with 4 oz tonic water in a rocks glass filled with ice. Add a cucumber garnish.

Three refreshing cocktails featuring Prairie Cucumber Flavored Organic Vodka

Pimm’s Cup

Ingredients

  • 1 oz. Prairie Cucumber-Flavored Organic Vodka 
  • 1 oz. Pimm’s 
  • 2 dashes Bitter Truth Celery Bitters 
  • ½ oz. fresh lime juice 
  • Fever Tree Ginger Ale 
  • Lemon or lime wedge 

Directions
Shake and strain into a Collins glass with fresh ice and fill with Fever Tree ginger ale. Top with 2 dashes of Bitter Truth Celery Bitters. Garnish with a slice of cucumber and lemon or lime wedge.

Midwest Cucumber Dill Sour

Ingredients

  • 1 oz. Prairie Cucumber-Flavored Organic Vodka 
  • 1 oz. Gamle Ode Dill Aquavit 
  • 1 oz. fresh lime juice 
  • ¾ oz. simple syrup* 
  • 1 eye dropper Bittercube Orange Bitters 

Directions
Add all ingredients to a shaker with ice and shake. Double strain into a chilled coupe. Float thin cucumber wheel and top with fresh Dill sprig for garnish.

Ingredients

  • 1 ½ oz. Prairie Cucumber-Flavored Organic Vodka 
  •  ½ oz. Lillet 
  •  ½ oz. fresh lime juice 
  •  Splash simple syrup, honey, and soda 

Directions
Muddle cucumber slices with Prairie Cucumber-Flavored Organic Vodka, syrup, and honey. Build with soda and Lillet. Garnish with cucumber wheel.

*To make simple syrup, combine one cup sugar and one cup water in a medium saucepan. Bring to a boil, stirring, until sugar has dissolved. Allow to cool before using.

Classic Cocktails: The Screwdriver

Some cocktails never go out of fashion. Think martini, sidecar, gin and tonic and you are definitely on the right track! Hot trends may come and go, but some drinks are simply timeless.

SCREWDRIVER
Ingredients

  • 2 ounces vodka
  • 6 ounces orange juice
  • Orange slice

Directions
Fill a lowball glass half full with ice. Add vodka and stir in orange juice. Garnish with the orange slice and serve.
